Apple Cinnamon Overnight Oats
I love making overnight oats. Making this recipe the night before, ends up giving you more time in the morning. It’s the perfect ‘breakfast on the go’ recipe.
Serves 2 ~ Gluten free, nut free, vegan
Ingredients
1 1/2 cup oats
1 teaspoon cinnamon
2 tablespoons hemp seeds
1 tablespoons chia seeds
1 1/2 cups unsweetened coconut milk
1/4 cup goji berries
1 apple, diced
1 tablespoon maple syrup or other sweetener (use 1 teaspoon powdered stevia for a no sugar option)
Method
- Dice apple.
- Combine oats, cinnamon, hemp seeds, chia seeds, and goji berries in a bowl.
- Pour in coconut milk and stir.
- Layer diced apple and oat mixture in two 500ml jars, secure with lids. Place in the fridge overnight.
